Ritz Cracker Cake

Directions
- Beat egg whites until foamy.
- Fold in sugar, baking powder and vanilla slowly.
- Put crushed crackers, pecans then mix slowly.
- Grease a 9x13 baking dish with margarine.
- Pour mixture in then spread evenly.
- Bake at 325 for 25-30 minutes.
- Cool and then top with cool whip.
Crush cracker with hands. Don't put in food processor because you don't want the crackers powdery, you want them just in crushed pieces. If you put cool whip over the whole cake, refrigerate or if you put the cool whip on individual pieces the cake doesn't have to be refrigerated.

40 Ritz crackers crushed1 cup chopped pecans6 egg whitescool whip2 tsp vanilla2 tsp baking powder2 cup sugar
